Sometimes I want breakfast for dinner. And sometimes I want dinner for breakfast. And sometimes I want some unholy offspring of both at the same time.
Hence eggy-pasta. Or pastay-eggs. Not entirely sure what it’s called, all I know is it is the Megazord of meals. It’s got spaghetti. It’s got two scrambled eggs. It’s got a lot of butter and cheese. It’s probably a million caloreies.
Also, it’s great for hangovers. Or hunger hangovers. Whatever you’re suffering from.
And it’s so easy, a hungover person can make it.
- 8 oz of spaghetti
- 2 eggs, beaten
- 1 tsp of butter
- grated Parmesan cheese
Makes 2 large servings or 1 desperate serving.
- Bring pot of salted water to boil. Cook spaghetti for 5-6 minutes, until mostly cooked, but not quite al dente. Drain.
- In a skillet over medium heat, toss pasta, butter, and eggs. Keep tossing until both eggs and pasta are cooked through. Remove from heat.
- Season with salt and pepper to taste, and top with a lot of cheese. Serve.
